Adobe Illustrator in Houston, TX

Im starting a small business involving licensing artwork that is digital ready or converting it to digital format ( scanning )then lightly to heavily editing it, (-cropping, cutting out selections, adding backgrounds / frames, editing colors, etc. ) then laying out the images so that they are ready to hand off my printer to be printed and cut. Im specifically interested in using Adobe Illustrator for this task, but it seems i will also need to learn some photoshop. I'v used illustrator a bit over the years, but i'm new to Photoshop. I plan to take TIFF images, enhance them, select / cutout / crop areas, lay them on various backgrounds and / or use different selections to make compositions , then print-cut the compositions on various types of adhesive vinyls to make stickers, iron on transfers, etc. I will also be using silkscreening processes in the near future. Im simply looking for someone who is very well versed in the process described above and can take me through all of it in a smooth, complete and comprehensive way. I would like to be able to record the lessons some way, probably just by simply using a video camera or perhaps video screen capturing software.
