Quicken in New York, NY

Hi Caroline, I have used an old version of Quicken well enough, sort of, to do my taxes. I want to set up a totally new file with none of the old categories. I have a newer version of Quicken also but don't know how to use it. What I need is to set up a new file in the simplest way, with maybe a dozen categories, that's is. Nothing extra. Please let me know what you think about this. I love on 92 Street in NYC.
